Ultrasound-Assisted Extraction of Total Phenolic Compounds and Antioxidant Activity in Mushrooms

The consumption of mushrooms has considerably increased in recent years because their beneficial nutritional properties due to essential amino acids, proteins, and dietary fiber content. Recent research shown that they are also rich polysaccharides phenolic compounds. These compounds exhibit decisive free radical ROS scavenging power with potential application the treatment neurodegenerative disorders. In addition, present important like antioxidant, antiaging, immune modulation. research, optimization for extraction total antioxidant activity (DPPH ABTS), based on ultrasound–assisted techniques been carried out. Five variables (% MeOH solvent, temperature, amplitude, cycle, sample:solvent ratio have selected; both content as well ABTS)) considered response variables. optimal conditions, determined by means a multiresponse method, were established at 0.2 g sample extracted 15.3 mL solvent (93.6% MeOH) 60 °C 5 min using 16.86% amplitude 0.71 s?1 cycles. A precision study optimized method performed deviations lower than 5%, which proves repeatability method. Finally, applied wild commercial from Andalusia Northern Morocco, confirmed its suitability mushroom samples, while ensuring maximum activity.
